Office Manager

Sheridan Sachse

Gets Sh*t Done. Quietly.
Sheridan Sachse handles Manticore’s bookkeeping, office management, and day-to-day operations. She’s quiet at first, taking it all in while everyone else fills the silence. But bring up something that catches her interest, and good luck getting a word in. She’s suddenly got plenty to say. When it comes to work, she’s the one making sure the practical stuff actually gets handled, from the daily to-dos to the forms nobody else wants to touch. She’s not looking to make a speech about any of it. She’d rather get sh*t done than talk about it.

In my own words

“Do it right. Do it once. Recycle the rest.”

— Sheridan
I’m organized, and somebody has to do it. That’s really the short answer. I like knowing things are taken care of properly, without having to circle back and fix what could’ve been handled the first time. Why create extra work for yourself? Get it sorted, get it right, and don’t leave a bigger mess than you started with.

Oh hi!

I’m Sheridan

Books, Paws & a Little Twang

Give me a good book, a walk with my dog, or some country music, and I’m pretty content. My cats expect their bedtime cuddles, and I fully intend to deliver. Above all, I have a deep love for my family. That’s the important stuff.

I ♡ Dr Pepper, Carbs, & Half-Done Projects

My ideal day off? Starting a project I have absolutely no chance of finishing. Throw in a Dr Pepper and a suspicious amount of carbs, and that’s pretty much the plan. Will I finish what I started? Let’s not get carried away.
Organized by Necessity

I'm observant by nature. I notice when something's off, even if nobody's asked me to look. A missing piece, a number that seems wrong, a task that's been sitting too long. Those things stick with me until they're addressed. I'd rather catch a problem early than find out later that a small oversight turned into a much bigger headache.

01

Bookkeeping

Numbers Don't Bluff.
I want totals that match, receipts that line up, and records that make sense when you check them.
02

Office Operations

Order Over Office Drama.
The office runs on routines, and I keep them running. Nobody has to ask twice, and nothing slips through the cracks.
03

Zero-Waste Office

Bring Your Own Fork.
No plastic straws, no disposable utensils. If it can be recycled, it gets recycled, so nothing hits the landfill that doesn’t have to.
Sheridan Sachse, Office Manager at Manticore Marketing
How I work

No Loose Ends

No Excuses
I like being on top of everything. That means checking the small stuff, asking the extra question, and probably stressing over something most people wouldn’t think twice about. Fine by me. I’d rather worry about it now than leave someone else cleaning it up later. If my name is attached to paperwork, it better hold up. I want things accurate, presentable, and ready when they’re needed. I’m not interested in handing over something half-finished and hoping nobody notices. If you appreciate straight answers, high standards, and people who follow through, I think we’ll get along just fine.
SMALL TEAM. BIG WINS.

THE CREW I RUN WITH

You don’t talk to a rep. You talk to the person doing the work.

Running a small business isn’t easy.

It’s long days, real risk, and betting on yourself when nothing’s guaranteed.

Justin and Peyton didn’t set out with some perfect roadmap for Off the Rails—they just kept showing up, figuring it out, and building something people now come back to week after week.

That’s what we love about the clients we get to work with. Just people doing the work and growing something real.

Off the Rails is now a full experience—beer, food, and a place people actually want to hang out.

If you’re in Pocatello—skip the chains. Go be a part of something local.

And P.S.… if you go, get the peanut butter stout. Trust us on that one. 🥜🍺

A line wrapped around the building before they were even officially open.

That’s when Sidney knew the vision was working.

We sat down with Sidney Davis, co-owner of Extreme Rush, to talk about what it took to bring one of Pocatello’s most unique attractions to life.

Like a lot of small business owners, there were plenty of moments where the question was, “Is this actually going to work?”

Finding the right building. Working through financing. Taking a big risk on a big idea.

But they kept pushing.

Now, Extreme Rush is bringing indoor go-karting, laser tag, arcade games, and family fun to East Idaho—and creating the kind of place where people can make memories together.

One thing that stood out from our conversation was how much this project was built for the community. Born and raised in Pocatello, Sidney, Jason, and their team wanted to bring something here that would “wow” people and put Pocatello on the map.

And judging by the turnout, Pocatello was ready for it. 🏎️✨

Come share the experience and make some memories. ❤️

Beixy’s Kitchen started with a husband who wanted free empanadas 24/7… and two weeks later, there was a food truck in the driveway. 😂

But behind the humor is a real small-business story about planning, risk, community support, and figuring things out as you go.

Beixy says passion alone isn’t enough—you have to understand the numbers, know the risk, and be willing to learn from the right people. Along the way, other local businesses helped open doors too, including Deidra at @idahocoffeecompany , who gave them a place to start before the truck was even ready.

Then local artist Mark Daniels (@creativechameleonmd ) helped turn that truck into something bigger than a place to grab food. Its colors represent Venezuela, while the Pocatello flag represents Beixy’s other home.

At the end of the day, that’s what Beixy’s Kitchen is really about: making people feel welcome, sharing her culture through food, and creating a little sense of home wherever the truck goes. 🥹❤️

And yes… apparently being recognized as “the empanada lady” in Costco comes with the territory. 😄

If you haven’t tried Beixy’s Kitchen yet, consider this your sign to go fix that. Seriously. Her empanadas are straight up what dreams are made of.
